So Husband and I bought a pumpkin last week so we could roast it and toss some puree in the freezer for use in baking. I want to do this with a few pumpkins so I have pumpkin for months. This was clearly a genius plan.
Until of course we couldn't cut the ruddy thing in half to roast it. We tried slicing and stabbing... we tried all sorts of different knives... nothing. So finally this happened:
Which, with a little effort, was much more successful!
So then we roasted the pumpkin halves. One at a time, because it turns out the pumpkin was too big to put both in one baking dish.
And then, after I scooped out all the inside.... this happened:
Still trying to figure out what to do with it. I am convinced that it will be amazing for something or other. No idea what.
In other, related news: Curried Coconut Pumpkin Soup! Because after buying a 2kg bag of coconut at Costco, we pretty much have to put it in everything.
